Your New Favorite Green Juice
While I love most things green, it did take me a little while to jump on the green juice bandwagon. Oddly enough my parents had a juicer back in the 90s and I remember grimacing as a kid when they’d offer me a green concoction. I guess they were ahead of the times because now I have a juicer and kind of love the thing. Yep, I can be a slow adapter but now that I have experienced true green juice goodness, there may be no turning back.
We’ve discussed the juicing craze a bit before – including the benefits behind it and the pros/cons that come with the hype.
Whether you’re curious about juice or you’re already hard-core this juice will become your new favorite green juice. It’s refreshing and a little sweet. The apple is key to balancing out all the veggies! And, the lemon/lime combo add a hint of citrusy spring flavor.
I especially recommend this recipe to those who have trouble with salad-like, pungent juices.
I know a lot of people who juice first thing in the morning. I tend to enjoy my juice mid morning or for an afternoon snack. (I still love my morning coffee, nut butter and occasional muffin…I’m human.) Either way this juice is a nice compliment to lunch or as a tasty stand-alone snack.
Your New Favorite Green Juice Recipe
(Makes 1 large serving, or 2 small juices.)
Ingredients
- 2 medium cucumber
- 4 to 5 ounces baby spinach or kale
- 1 lemon
- 1/2 fresh lime
- 1 large organic red or green apple (I used pink lady)
- 1 mint sprig (optional)
Directions
Depending on the strength of your juicer you may need to chop your apple and cucumber into fourths. Don’t have a juicer? A blender or food processor will make green smoothies instead. Place the first 5 ingredients in juicer, pour over ice and garnish with mint sprig. That’s it! Enjoy the best green juice!
*Stay tuned for my recap of my recent 3-day juice experiment and how I went from being a total juice skeptic to a more tolerant chica.
Looks healthy… And tasty. I’m new to juicing, how long after you make it is juice typically good for? I’d like to make big batches to save time.
Hey! I am in the market for a juicer, what model did you get and do you like it? Thanks!
Jonathan – Glad to hear you are starting to juice 🙂
Juice is actually best fresh – or consumed within 24 hours at most. I’d love to be able to make my juice for the week once & be done, but you’ll reap more benefits & it’ll taste better if consumed right away.
Nic G – I have a cuisinart CJE 5-speed juicer. I got it last October and while it is a PAIN to clean (I think most are) I really like it. Hope this helps!
Thanks Beth! I am looking to purchase a juicer this week! (ahem, since i have been very un-sustainable and un-green and purchasing $5 juices at a local store a few times a week…)
