Quick Tip: Eat your Leftovers

Fossil fuels are used to fertilize, harvest and process much of the food we eat.  Ample gas is spent transporting food from processor to manufacturer.

Considering the valuable resources spent on food processing, it’s disturbing that over 40% of food produced in America is not eaten.

What can you do to lessen the impact?  Save those leftovers! It’s easy to dump the rest of dinner down the garbage disposal. Instead, enjoy it for your next meal.  Or, freeze your extra portion and defrost down the road.  These simple changes can save money and cut down on needless food wasted.

  1. Also, get a big freezer bag and start tossing in your (washed ) veg scraps! Cabbage cores, onion skins, carrot ends… when you are doing food prep get the bag out, toss the scraps (that may otherwise have gone down the disposal or in the trash if you don’t have room for composting) and then put it back in the fridge! You can even put in things like squash peels if it is from organic squash (too much poison on the skin of conventional squash – potentially.) If you are a meat eater, you can keep a separate bone bag in the freezer.
